- 2 ½ cups of grated carrots,
- 1 ½ cup of raisins,
- 1 ½ cups of whole wheat flour,
- 1 cup of all purpose flour,
- 1 tablespoon of cinnamon,
- 2 tablespoons baking powder,
- 1 can of unsweetened thawed frozen apple juice,
- 1 tablespoon of dark corn syrup,
- 1 tablespoon of vanilla extract,
- 4 egg whites, and
- 1 ¼ cup of unsweetened applesauce.
For the icing you will need:
- ½ cup of unsweetened thawed frozen apple juice,
- 1 packet of unflavored gelatin,
- 1 cup of yogurt cheese, and
- 2 tablespoons of vanilla extract.
Making the icing, pour 2 tablespoons of apple juice in a medium cooking pan and the gelatin let stand for a few minutes and then bring to a rolling boil over high heat.
When the gelatin is completely dissolved remove it from heat then mix together the yogurt cheese, vanilla, and the rest of the apple juice. Using an electric blender, mix together, on low speed until well blended. Turn the mixer on medium speed and slowly add the gelatin mixture.
Place in the fridge for 45 minutes. Pre-heat your cooking oven to 350 degrees Fahrenheit.
Mix together the carrots and raisins in a medium sized bowl and set aside. In a large bowl put together the flours and mix it, add cinnamon and baking powder. Add the apple juice, corn syrup and vanilla when everything is blended well.
Beat in the egg whites one at a time with an electric blender on medium speed. Now, stir in the applesauce and the carrot mixture.
Pour into cake pan and bake for around 40 to 45 minutes or until the cake is done. Let cool and then frost with the yogurt cheese icing.
Keep in the fridge to keep fresh and nicely cold.

In Britain they mix it with water to make a hard coating on a layer of marzipan for traditional English Christmas cake. If it is desired to make the icing slightly softer, glycerine is added to the sugar and water mixture
If you need it urgently you can make it at your own home by putting regular sugar in a blender and mix it away until the sugar is very fine. It is very easy procedure so there is no need for you to go to market just for icing sugar-of course you have to have a blender in your kitchen first.
